The default control configuration on PC Tetris games tend to include Up to rotate clockwise and Control to rotate counterclockwise.

I'm not sure how long the TAP Death roll is without holding start, but I think it is approximately half as long as the TAP Master roll.
This typically won't affect anything. The autorepeat tends to be hardcoded, and any sensitivity options would be provided in-game.
